Here is my favorite Crust-less Keto Cheesecake recipe!! I hate when I have to scroll for miles to find the actual recipe on blogs so we’ll keep this short and sweet! You’ll find mine right below! Enjoy! Let me know what you think when you try it!

Directions

  1. Set out your cream cheese to soften to room temperature. Also set out your eggs & sour cream to get to room temperature. ⁣
  2. Pre-heat your oven to 325 F (Make sure your rack is in the middle of the oven)⁣
  3. Cut wax paper in the shape of your springform pan and place at the bottom of the pan. ⁣
  4. Once cream cheese is to room temperature place in a mixing bowl and beat until it is light and fluffy. (Use a hand mixer for easier use) ⁣
  5. Slowly add in your sweetener mixing with your hand mixer. ⁣
  6. Add your room temperature eggs and beat until smooth. ⁣
  7. Add in your vanilla extract, lemon juice (or culinary oil), and sour cream. Best until smooth. ⁣
  8. Pour the mixture into your pan. Try to get the top even. ⁣
  9. Place in the oven (rack in the middle of the oven) Bake for about 50 minutes. Or until the top is no longer glossy. You still want the center to be jiggly. ⁣
  10. Remove from the oven and set on the counter until cooled to room temperature. ⁣
  11. Take a knife and separate the edges from the springform pan. ⁣
  12. Cover the top LOOSELY with plastic wrap. Place in the refrigerator and let it sit for 8 hours or overnight. ⁣
  13. Remove from the refrigerator and take the springform siding off. Decorate and serve! ⁣
