Mouthwatering Keto Banana Bread!

Okay! You guys overwhelmingly told me you need this banana Bread recipe!! So here it is! Enjoy and let’s do this keto thing! This recipe has approximately 3g net carbs per slice/ For about 8 slices per loaf. (Adjust based on the size of the slices. About 22g net carbs per loaf)

INGREDIENTS

  • 2 Cups Almond Flour (Buy this good deal here)
  • 2 tsp Baking Powder
  • 3/4 Cup Lakanto Monk Fruit Sweetener (Buy it here)
  • 1/2 Cup Butter
  • 2 tsp Vanilla Extract
  • 1 tsp Banana Extract (using the extract is super important to keep those carbs low!)
  • 2 Ounces Cream Cheese
  • 3 Large Eggs
  • 2 tsp Unsweetened Almond Milk
  • Ground Cinnamon

INSTRUCTIONS

  1. Preheat oven 350 degrees F
  2. Butter your pan well. I used a rectangular loaf pan. Set that aside.
  3. Pour almond flour and baking powder into a bowl. Set that aside.
  4. Cut up butter into slices, combine with sliced cream cheese.
  5. Microwave the cream cheese and butter mixture. Recommended intervals of 30 seconds or less. You don’t want to burn the cream cheese! Stir until smooth.
  6. Add the monk fruit (or whatever sugar replacement you are using) into the warm butter and cream cheese mixture until the monk fruit is melted into mixture.
  7. Add vanilla extract and Banana Extract and sour cream to the wet mixture and stir well.
  8. Combine the wet mixture with the dry mixture (flour and baking powder).
  9. Time to add your eggs. Stir well until the mixture is smooth.
  10. Once oven is preheated pour your mixture into your buttered loaf pan and top with ground cinnamon and then place in the oven.
  11. Bake for approximately 35-45 minutes. Check with toothpick, it’s done when the toothpick comes out clean.
  12. Cool the banana bread well before taking it out of the pan so that it doesn’t crumble. We let it cool for about 45 minutes.
  13. Slice and enjoy!
